East, South, West (sunrise to sunset).

Combination :

  • 70% Pinot Noir (partly vinified in wood).
  • 23% Chardonnay.
  • 7% Pinot Blanc.

15% reserve wines.
Malolactic fermentation in stainless steel tanks. 30 months ageing in the cellar.

Dosage : Brut.

Tasting notes : Pale gold colour, amber reflections. Elegant and floral nose, spicy and dried fruit notes. Tart, ample, fruity and tense on the palate.

Wine and food pairing: Salmon, avocado and pomegranate tartar, Potato and shrimp bricks with lemon confit, Back of cod in lomo dressing, endives with orange and honey sauce

Serving: 10°C in curved flute.
