Cuvée Douce Folie
One grape variety: Pinot Noir.
One plot: “Douce Folie” (Merrey sur Arce): south-west facing (good ripeness), plot selected for its capacity to produce coloured wines: 50-year-old vines, limited yields, specific work: pruning, disbudding, green harvesting, manual leaf removal, grassing, ploughing.
One year: Rosé made only in vintages allowing a perfect sanitary condition and optimal ripeness of the grapes.
Vinification: Vatting time of about 48 hours in stainless steel tanks for the whole harvest, with an interruption of maceration when the desired colour is obtained. Malolactic fermentation in stainless steel tanks.
24 months ageing in the cellar.
Dosage: Extra Brut.
Tasting : Clear, medium deep colour. Floral notes of violet, fresh berries: raspberry, blackcurrant, morello cherry, mineral notes, expressive nose, fine and delicate. Supple opening on the palate, creamy effervescence, fleshy, acidic, fairly winey, gourmet, fruity.
Food/wine pairing: Iberico ham and cold cuts, Aubergine rolls with ricotta and pancetta, Beef carpaccio, Tiramisu with pink biscuits and strawberries.
Serving conditions: 12°C in curved flute.
